Nakano Review

Look what I fixed for dinner tonight.  I can tell it's going to be a summer favorite for us too.  With it so hot here in the summer, we're always looking for lighter meals.  Nearly 100 degree temperatures and heavy food do not mix at all!  It's not in the high 90's today but it's already been here and we'll have plenty more on the way.   This  Penne with Tomatoes and Feta Cheese recipe that I made for dinner last night was so good.  I got the recipe right off Nakano's website.  Just click on their name.  I've included 2 recipes right here for you to see.  

They were kind enough to send me 2 different flavors of their Rice Vinegars.  I received the Natural Rice Vinegar and the Original Seasoned Rice Vinegar.

                               Penne with Tomatoes and Feta Cheese

INGREDIENTS
8 oz. uncooked penne pasta
1 can (14-1/2 oz.) diced tomatoes in juice, drained
1/3 cup pitted kalamata or ripe olives, halved
1/4 cup NAKANO Seasoned Red Wine Vinegar Italian Herb, or Seasoned Rice Vinegar Red Pepper
1/4 cup chopped basil or Italian parsley
2 Tbsp. olive oil
1/2 tsp. each salt and fresh-ground pepper
1 clove garlic, minced
1 cup (4 oz.) crumbled feta cheese
DIRECTIONS
Cook pasta as package directs; drain and keep warm. In a large bowl, stir together tomatoes, olives, rice vinegar, basil, oil, salt, pepper and garlic. Add pasta and cheese; toss well. Serve warm or at room temperature. Garnish with additional basil, if desired.

Makes 4 main dish or 8 salad servings.

Tip: This dish makes an excellent main dish, or cover and chill for a delicious salad.

I've used Nakano Rice Vinegar for years but it was always only to make a cucumber salad.  See my recipe below.  It's so good.  Now I can go to their website and find a lot of new to me recipes.  Thanks Nakano for sending me your products to review.  5 STARS!!!

Rice Vinegar Cucumber Salad Recipe:

  • 1 teaspoon sugar
  • 1/4 cup rice vinegar
  • 2 tablespoons vegetable oil
  • 1/2 teaspoon salt
  • fresh ground pepper
  • 1 teaspoon dried dill weed (to taste)
  • 4 cucumbers (about 1 pound)

Directions:

  1. Mix sugar, vinegar, oil, salt and pepper and dill in a serving bowl.
  2. Peel cucumbers, if desired, then thinly slice and add to bowl, stirring to mix and coat.
  3. Let marinade.
